Oxtail and Leg Beef Stew





How To Cook Oxtail and Leg Beef Stew

This recipe I learned from my mother she used to cook this dish when we are a kids back to the Philippines. When we first migrated here in America and have first gathering in my mom house she prepared this one of her dish that everybody liked.

My husband he is so picky eating habit, if not my stuff I mean if I'm not the one who cooked he will never eat, so I decided to try to cook this dish with my own idea.

So he started eating till he loved to eat this dish.

I posted the recipe of my mother you will find below, and I'm sure you will like to eat this dish too.

Ingredients:

2 pieces leg beef

1 large oxtail

1 can Garbanzos

1/2 can salted beans

1 whole garlic (crush)

1 piece large onion (sliced)

1 piece medium ginger (sliced)

1 tablespoon Tamarind Soup

2 cubes Bouillon knorr

1 tablespoon Peanut Butter

3 Bay Laurel leaves

1 teaspoon whole Black Pepper

1 teaspoon Cinnamon powder or 1 stick

1 red Bell Pepper

1 cup Green Peas

8 cups of water (just estimate be sure it is enough to cook and little gravy)

Procedure:

Boil the water then put the leg beef, after boiling the water throw out the water, and remove the leg beef put aside.
Boiled another water and add the leg beef, bouillon, ginger, garlic, cinnamon, laurel, black pepper, and tamarind soup on it, and stir all together.
While cooking the leg beef until tender add the oxtail, and salted beans, and reduce the heat to low. Cover and simmer 30 minutes until cooked.
If you think the meat are cooked add the green peas, stir all together then cover and simmer 5 to 10 minutes..
Then add the garbanzos, red pepper, and peanut butter, and stir again, cover and simmer 5 minute until all the vegetables are tender.
When it cooked serve with basmati rice while hot.

Pizza





Hi! I used to baked pizza when I'm in Kuwait during Ramadan, to share to our neighbor, friends, and to my sister in Islam.

Ingredients:

4 cups white flour

1 teaspoon salt

2 tablespoon sugar

1 tablespoon yeast

2 tablespoon milk powder

4 tablespoon ketchup

2 cup mozzarella cheese, grated

1/4 cup olive oil

2 tablespoon dried mint

1 1/2 cup water

Preparation:

Combine flour, yeast, salt and sugar, add water and knead until get smooth and homogenous dough .
Cover and keep in warm place until double size.
Divide dough into balls, put over floured tray. Cover and keep for 5 minutes.
Combine, cheese, olive oil, ketchup and dried mint-flatten each piece on floured surface, arrange over greased oven-pan.
Pour 3 tablespoon cheese mixture on each piece and bake in oven.

Chicken Biryani


Hello everyone! I want to share the chicken biryani my husband favorite dish. I learned this recipe from our family friend in Kuwait.

Preparation in cooking:

Ingredients:

1 kg Chicken (cut into pieces)

500 gm Basmati Rice (washed and soaked for 30 minutes)

Whole Garam Masala (1/2 stick cinnamon, 2 bay leaves, 1 teaspoon black pepper, 1/2 teaspoon cloves, 1/2 teaspoon cardamons, 1 teaspoon coriander, 1 teaspoon cumin

4 teaspoon garam masala powder

50 gm butter

4 teaspoon Garlic (chopped)

1 cup Onions (sliced)

4 teaspoon ginger (chopped)

3 teaspoon Red Chili Powder

1 tablespoon Coriander Powder

5 tablespoon Oil

2 teaspoon Turmeric Powder

2 cups Curd (yogurt)

3/4 cup Tomato (chopped)

4 Bay Leaves

For the marinade:

1 1/2 teaspoon Red Chili Powder

2 teaspoon Finger (chopped)

2 teaspoon Garlic (chopped)

1 teaspoon Garam Masala Powder

1 teaspoon Turmeric Powder

1 cup Yoghurt

salt to taste

For garnishing:

1/2 gm Saffron (dissolved in 1/2 cup milk)

2 tablespoon Rose Water

Procedure:

Put all the ingredients of the marinade in a bowl and mix well.
Add chicken pieces to it and leave for an hour.
Now boil water, add 1/2 of the whole garam masala, bay leaf, and rice in it.
Cook the rice until 3/4 is done, drain and keep it aside.
Heat oil in a thick bottomed pan and add remaining whole garam masala.
Allow it to crackle, add sliced onions and saute it till golden brown.
Add 1 teaspoon of the remaining garam masala and all the remaining ingredients, including tomatoes, but excluding rice.
Cook for 5 minutes, combine marinated chicken with it.
Cook the chicken until is tender.
Place alternate layers of chicken and rice.
Now sprinkle saffron, remaining garam masala powder and butter in between the layers and on the top.
Carefully end it with the rice layer topped with saffron and rose water.
Cover and seal it with aluminum foil.
Cook it further on low flame for 10-12 minutes
Chicken Biryani is ready to serve.

Blueberry Streusel Cobbler

If you are using frozen blueberries in this recipe, do not defrost before adding them to the batter. This will help prevent the blueberries from "bleeding" into the batter.

Ingredients:

1 pint fresh or frozen blueberries

1 (14-once) can Eagle Brand Sweetened Condensed Milk (Not evaporated milk)

2 teaspoons grated lemon peel

3/4 cup plus 2 tablespoons cold butter or margarine

2 cups biscuit baking mix, divided

1/2 cup firmly packed brown sugar

1/2 cup chopped nuts Vanilla Ice Cream Blueberry Sauce (recipe follows)

Procedure:

1. Preheat oven to 325 degrees Fahrenheit. In bowl, combine blueberries, Eagle Brand and peel.

2. In large bowl, cut 3/4 cup butter into 1 1/2 cups biscuit mix until crumbly; add blueberry mixture. Spread in greased 9-inch square baking pan.

3. In small bowl, combine remaining 1/2 cup biscuit mix and sugar; cut in remaining 2 tablespoons butter until crumbly. Add nuts. Sprinkle over cobbler.

4. Bake 1 hour and 10 minutes or until golden. Serve warm with vanilla ice cream and Blueberry Sauce. Refrigerate leftovers.

Blueberry Sauce: In saucepan, combine 1/2 cup sugar, 1 tablespoon cornstarch, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg. Gradually add 1/2 cup water. Cook and stir until thickened. Stir in i pint blueberries; cook and stir until hot.

Easy Chocolate Lover's Cheesepie

Ingredients:

3 packages (8 ounces each) cream cheese, softened

3/4 cup sugar

3 eggs

1 teaspoon vanilla extract

2 cups (12-ounce package)Hershey's Mini chips - Semi-Sweet Chocolate, divided

1 extra-serving-size package graham cracker crumb crust (9 ounces)

2 tablespoons whipping cream

Procedure:

1. Heat oven to 450 degrees Fahrenheit

2. Beat cream cheese and sugar in large bowl with mixer until well blended. Add eggs
and vanilla; beat well. Stir in 1 2/3 cups small chocolate chips; pour into
crust.

3. Bake 10 minutes. Without opening oven door, reduce temperature to 250 degrees
Fahrenheit; continue baking 30 minutes or just until set. Remove from oven to wire rack. Cool completely. Cover; refrigerate until thoroughly chilled.

4. Place remaining 1/3 cup chips and whipping cream in small microwave-=safe bowl.
Microwave at High (100%) 20 to 30 seconds or just until chips are melted and
mixture is smooth when stirred. Cool slightly; spread over top of cheese pie.
Refrigerate 15 minutes or until topping is set. Cover; refrigerate leftover
cheese pie.

How to Bake Chocolate Brownies



This is my favorite Chocolate brownies, I just want to share to all of you. It is so delicious and moist.


Ingredients:

1 cup flour

1/2 white sugar

1/2 brown sugar

1 lbs unsalted butter

3/4 cup cocoa

3 pcs eggs

2 teaspoon vanilla

1/4 teaspoon baking powder

1/2 cup walnuts or pecans

1/2 cup unsweetened white or dark chocolate chips

1/2 teaspoon of salt


Preparations:

1. Lightly grease or Spread little butter on the baking pan; set aside.

2. Melt the butter in sauce pan

3. In a large bowl put the flour, sugar, cocoa, salt then mix all the dry ingredient
together.

4. Add the eggs, melted butter, and the vanilla.

5. Mix them all together then add the chocolate chips then mix again.

6. After mixing them all together transfer to baking pan and spread all together.

7. Preheat the oven 350 degrees Fahrenheit for about 30 to 35 minutes.



Ingredients:
3/4 cup (1 1/2 sticks) butter or margarine, softened

1 cup granulated sugar

1 cup firmly packed light brown sugar

3 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

2 1/2yeaspoon baking powder

1/2 teaspoon salt

1/3 cup unsweetened cocoa powder

1 tablespoon butter or margarine, melted

1 cup "M & M's" Semi-Sweet Chocolate Mini Baking, divided

Procedure:

1. Preheat oven to 350 degrees Fahrenheit. Lightly grease 13 X 9 X 2-inch baking
pan: set aside.

2. Large bowl, cream 3/4 cup butter and sugars until light and fluffy; Beat in eggs
and vanilla

3. In medium bowl, combine 2 1/4 cups flour, baking powder and salt; blend into
creamed mixture.

4. Divide batter in half.

5. Blend together cocoa powder and melted butter; stir into one half of the dough.

6. Spread coca dough evenly into prepared baking pan.

7. Stir remaining 1/4 cup flour and 1/2 cup "M&M's" Semi-Sweet Chocolate Mini Baking
bits.

8. Bake 25 to 30 minutes or until edges start to pull away from sides of pan.

9. Cool completely then cut into bars.

10. Store in tightly covered container.

Sweet Cinnamon Rolls


I learned this recipe from my niece Fatima, she prepared this for my birthday! thanks FatMAt! it is really taste good. I tried to prepared and I add some cardamon on it for flavor, I found it gave the bread a flavor that was perfect with coffee or tea. I started with 1/4 teaspoon ground cardamon. see the Procedure below:


Ingredient:

2 cups sifted all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/4 teaspoon ground cardamon

1/4 teaspoon baking soda

1/4 cup vegetable oil or canola oil

3/4 cup buttermilk

8 tablespoons (1 stick) butter, softened

3/4 cup granulated sugar

1 teaspoon cinnamon

1 cup milk, optional

Preparation:


1. Combine flour, baking powder, salt and baking soda in a medium bowl and mix well.
Stir in vegetable or canola oil. Add buttermilk and stir just until blended.

2. Knead the dough on a lightly floured surface until smooth. Roll dough into a
15 x 8- inch rectangle.

3. Preheat the oven to 400 degrees Fahrenheit. Grease a 9-inch round baking pan
lightly.

4. Spread butter over the dough. Combine granulated sugar, cardamon, and cinnamon in a small
bowl and mix well. Sprinkle over butter. Roll up rectangle, jelly roll fashion,
starting from one long side. Pinch seam to seal.

5. Cut the roll into 1 1/2-inch slices. Arrange the slices, cut side up, in
prepared baking pan. Bake until lightly browned, about 15 to 20 minutes.


6. Remove from oven. Pour milk over the top, if desired. Serve hot.

Carrot Cake



Hi everyone! I just one to share with you, some of my family favorite cake, it is easy to prepare, and delicious. Some children they don't like to eat a cake with nuts, so I decided not to add nuts on it if my nieces, and nephew are my guest, but my husband he loves to eat this type of cake that I always bake this is enough for two baking pan so what I did, I split half of the batter with nuts on the top on it, and the other half with out nuts so everybody can enjoy eating in one bake time.

Ingredients:

2 cups sugar

3 cups all - purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

2 teaspoon cinnamon

3 larges eggs

1 cup oil

1/2 fresh milk or pineapple juice

2 cups grated carrots

1 cups mix dried nuts (almonds, walnuts, pistachio) chopped.

Procedure:

Prepare the big bowl and add the dried Ingredients such as flour, sugar, salt, baking soda, and cinnamon. Mix with spatula together.

Make like a well in the middle, add the eggs, oil, vanilla, milk or juice, and Mix well.

Preheat the oven to 350 degrees Fahrenheit then add the carrots, and mix together.

Pour into baking pans, and spread the nuts on the top on it,

Bake for 45 to 60 minutes, or until cooked, or insert a toothpick into the center of the cake till comes out clean.

Take it out to cool and ready to eat...

Cassava cake (Ella's recipe)

Cassava cakes are really very addicting taste, one I eat I will not stop eating plus it is very rich in fiber. My good friend, Ella, was kind enough to share with me her recipe. I hope that you'll like it.

Ingredients:

1 cup or 1 1/2 cup sugar (sweet)

1 can coconut milk

1 can condense milk

1 can evap. milk

2 pck cassava cake

2 eggs optional

¼ stick butter or margarine

1 tbsp vanilla

1/2 cup macapuno


Topping

½ can condense milk

½ macapuno

2 eggs


Procedure:

Preparing the batter

1. Combine the grated cassava, condensed milk, evaporated milk, sugar, and eggs in a mixing bowl and mix thoroughly.
2. Add the coconut milk, and the macapuno in the mixing bowl and mix all together.
3. Grease the baking tray or pyrex then pour-in the batter (ingredients that has just been mixed)
4. Pre-heat oven for 350 degrees Fahrenheit for 10 minutes then put in the baking tray or pyrex with batter and bake for 1 hour.
5. Remove the baking tray or pyrex after an hour so you can put the topping. (see below)

Topping:

Preparing the Topping

1. Combine the condense milk, egg white mix thoroughly.
2. Add the macapuno together.
3. Pour the topping over the Cassava cake (bake batter) and spread evenly.
4. Bake again for 30 to 45 minutes until topping turns light brown.
5. Remove from the oven when it ready to eat.

Cassava cake



This is the same cassava cake but different procedure you can try both recipes and you judge according to your taste which is better. This recipe according to my procedure! try this is so yummy.

Ingredients:

Batter

2 packs grated cassava (about 2 lbs total weight)

1 1/2 can Mae Ploy coconut milk ( about 560 ml )

1 can Nestle carnation evaporated milk ( about 354 ml )

1 can Nestle condense milk ( about 397 ml )

1/2 cup fresh milk

2 pieces raw egg

113 g butter, melted

6 tbsp Pamana macapuno string

1 tbsp vanilla

Topping:

1 can Nestle condense milk

10 tbsp Pamana macapuno string

6 pcs eggs yolk

Cooking Procedure:

Preparing the batter

1. Combine the grated cassava, butter, condensed milk, evaporated milk, fresh milk, and eggs in a mixing bowl and mix thoroughly, add the vanilla and macapuno string, and mix well.
2. Add the coconut milk in the mixing bowl where the mixed ingredients that has just been mixed)
3. Grease the baking tray then pour-in the batter (ingredients that has just been mixed)
4. Pre-heat oven for 350 degrees Fahrenheit for 10 minutes then put-in the baking tray with batter and bake for 1 hour.

Preparing the topping

1. Beat the egg yolk in large bowl.
2. Pour-in the condensed milk then mix thoroughly.
3. Add the macapuno string
4. Pour the topping over the Cassava cake (baked batter) and spread evenly.
5. Bake for about 30 minute or until color turns light brown
6. Remove from oven and serve.
