Jap Chae



Jap Chae (Korean stir fried noodles and Vegetables)

Hi everyone!

This is new recipe for me, I learned from my friend Bing  who share with me some of her delicious dish which is Korean stir fried noodles. It is easy to prepare and so delicious. one day, I just tried to cook this dish and am really afraid that my husband will not like it. But, when he taste, he said! ah! so delicious from whom you learn this dish. Am thankful that he like it. In my family everyone like. I know you too will like it. Don't worry one day you can taste all the recipe that I'm trying to experiment and I almost posted all my favorite recipe in this site. Thanks for reading.

Ingredients:

1 kilo vermicelli
3 bunch of Spinach
3 large Carrots
4 large Celery
1 Onion
5 pcs dried Shiitake Mushroom
1 pck of white Mushroom
6 pcs cloves of Garlic
10 pcs leaves Onion
1 table spoon Soy sauce
1 tablespoon Sesame oil
1 teaspoon Sugar, Salt to taste
1 teaspoon black Pepper
1 teaspoon Sesame seed
1 tablespoon garlic powder

Reparations:

  1. Soak 10 dried shiitake mushroom in warm water for a few hour until they become soft, squeeze the water out of them and slice thinly
  2. Slice a white mushroom (2 cups) thinly
  3. Cut the carrots, and celery into thin matchstick shaped pieces 5 cm long.
  4. Cut 10 green onions leaves into 7 cm long pieces
  5. Slice 1 onion thinly, clean the spinach, and drain.
  6. Boil the water in large pot add 1 teaspoon vegetable oil, 1 teaspoon salt, and put the rice vermicelli in boiling water and cook for 6 to 8 minutes stirring occasionally till cook or soft, and remove from the pot and flush the rice vermicelli with cold water or tap water for i minute, drain and put in a large bowl.
  7. Cut the noodles several times by using scissors and add 1 tablespoon of soy sauce, and 1 tablespoon of sesame oil, and 1 tablespoon garlic powder. Mix it up and set aside.
  8. In the boiling water, put the clean spinach and stir it gently for 1 minute. Then take it out and rinse it in cold water, remove any dead leaves thoroughly while rinsing. Squeeze it gently to get the water out. then cut it into 5 cm pieces.
  9. Add 1/2 tablespoon soy sauce and 1/2 tablespoon sesame seed oil and mix it and place it onto the large bowl.
  10. In skillet over medium heat, add few drops of olive oils fry the carrots and stir it with a wood ladle for 30 seconds. Put it into large bowl
  11. Add few drops of olive oil on skillet, and add slice celery, stir it for few minutes, and put it into large bowl.
  12. add few drops of olive oil on the skillet and add the sliced onion, stir it until the onion looks translucent. Put it into large bowl together with the carrots, and celery.
  13. Add few drops of olive oil on the skillet and add the sliced white mushrooms, stir it for a bit and then put it in the large bowl.
  14. Add few drops of olive oil on the skillet and add sliced shiitake mushroom, stir until it's cooked well, then add 3 cloves of minced garlic, add 1/2 tablespoon soy sauce and 1/2 teaspoon sugar. Stir  for another 30 seconds and then put it into the large bowl.
  15. Put a few drops of olive oil on the skillet and add green onions, stir for 1 minute and put it into the large bowl.
  16. Add 2 tablespoon of soy sauce, 3 teaspoon of sugar, 2 teaspoon of sesame oil, and 1 teaspoon of ground pepper to the large bowl. Mix all ingredients, then sprinkle 1 tablespoon of toasted sesame seed on the top.
Note: If you want to add some boneless chicken, and Shrimp it is optional, what I prepared is only all vegetables.


Banana Cake

Ingredients:
6 pcs banana
2 cups flour
1 1/2 cups brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
4 large eggs
1/2 cup chopped pecans or almond
3/4 cup oil
1 cup fresh milk

Preparations:

  1. Get the oven to 325 degrees Fahrenheit and grease up some cake pans.
  2. Beat sugar and vegetables oil in a small bowl with electric mixer for about 3 minutes add eggs and beat at once until combined.
  3. Combined all remaining dry ingredients in a large bowl mix together, add the mixture from small bowl slowly and beat well with spatula in one direction.
  4. Add mashed banana mix together with the batter.
  5. Pour the mixture into prepared baking pan, spread the pecans or almond on top on it.
  6. Bake in 325 degrees Fahrenheit for about 45 to 60 minutes, or insert a toothpick into center of the cake till come out clean take it out to cool.  



Pastries


This recipe I learned from a family friend, who invited us to have lunch with them, and after lunch, they offer us to have a tea together with this pastry with cheese inside. After a month we invited them to have a dinner with us, so I prepared this pastry with mix vegetable with chicken inside.


One day I bake the same pastry, and I brought in my job to let my co workers to taste the same pastry that I made. One of them miss Ella, who is interested to learned how I made.

So, that is why I posted here in my hubs.

Ingredients

2 tablespoon sesame seeds

2 teaspoon vegetable or canola oil

2 cubes bouillon (add 1 as your taste)

1 packed of mix vegetable

3 cups mozzarella cheese

3 larges eggs

1 large onion (slice )

1 lb grind chicken

1 whole garlic smashed (as you desire)

2 pack Pastry

Procedure:

Preheat the wok, or big pot, add oil when it hot, add the garlic till little brown, add onion then chicken and saute literally until the chicken little bit cook then add the mix vegetable on it, till it cooked. (don't overcooked)

Take it out from the pot, put on the bowl or drain it, until it cool.

While cooking the chicken with vegetable, take out the pastry from the freezer till it soft ready to use.

Prepare the cheese and add the whites eggs, mix together with spatula.

Put aside the yolks and a small bowl and beat with fork.

Take out one by one the pastry then add the filling or the cooked mix vegetable with chicken into half of the pastry in cover it add the mix cheese with white eggs both side to close.

Then put on the pan tray, brush the egg yolk on the top of the pastry then add sesame seed on it.

Bake for 350 degrees Fahrenheit to 45 minutes until it brown.

Pastry With Vegetable

Leche Plan



Ingredient:
10 egg yolks
1 can nestle condensed milk
1 can evaporated milk or fresh milk
1 teaspoon vanilla
1 cup brown sugar
1 cup white sugar
1/4 cup water

Instructions:

1. Separate the egg yolk from the white in one container or bowl 
2. Beat the egg yolk then add the condensed milk and evaporated milk.
3. Continue beating till it mix together and add the vanilla for flavor.
4. After mixing together, keep aside while 
5. Preparing the topping, put the saucepan in the stove and add the brown and white
sugar stir together till start melting the sugar add the water to boil for a few
minutes until the sugar caramelize.
6. Pour the caramelized sugar into the baking pan or any mould you can use any
shape as you like. 
7. Let the caramel set for 5 to 10 minutes in the mould.
8. Then pour the mixture on top of the caramel on the mould or baking pan cover 
with aluminum foil.
9. Bake for about 45 minutes (before baking preheat the oven to about 350 degrees) 
10. Or Steam for about 30 to 45 minutes (boiled first the water before steaming the 
plan)
11. After 30 minutes try to insert any toothpick on the top of plan if the
toothpick come out clean means it is cooked already then remove the plan.
12. Refrigerate for about 1 hour, then serve.
13. To serve: run a thin knife around the edges of the mould to loosen the Leche 
Plan. 
14. Place a platter on top of the mould and quickly turn upside down to position the golden brown caramel on top.

Choc-Cheese Brownies Slice

I want to experiment different type of cake, brownie.

Ingredients:
185g dark chocolate, chopped
45g butter
2 large eggs
3/4 cup castor sugar (fine sugar)
1/2 cup plain flour
1/4 cup self-raising flour
few drops almond essence
1/2 cup chopped walnuts

Filling:
60g butter
1 teaspoon vanilla essence
185g ricotta cheese
1/4 cup castor sugar
2 large eggs
2 tablespoons plain flour

Procedure:

  1. Grease a 19 cm x 29 cm lamington pan.
  2. Melt chocolate and butter over hot water, cool; do not allow to set.
  3. Beat eggs in small bowl with electric mixer until thick, add sugar gradually, beat until sugar is dissolved.
  4. Transfer mixture to large bowl, stir in sifted flours, essence and chocolate mixture.
  5. Spread half the chocolate mixture into prepared pan.
  6. Top with filling, then remaining chocolate mixture.
  7. Run a knife in a zig-zag pattern through mixture, sprinkle evenly with walnuts.
  8. Bake in 350 degrees Fahrenheit for about 30 minutes or insert a toothpick into the center of the cake till come out clean.  Cool in pan before cutting. 
  9. Store in refrigerator until set.
Filling
  1. Beat butter, essence and cheese together in small bowl with electric mixer until mixture is creamy.
  2. Add sugar, beat until fluffy, add eggs one at a time, beat until combined.
  3. Stir in sifted flour.
Keeping time: 4 days




Meat Kufta

I learn this from one of my friend in Kuwait, it is very famous to all Pakistani, Indian or Bangladesh. I used to prepare this during Ramadan only.

Ingredients:

Dough:
2 cups minced meat
4 tablespoon chopped white cheese
1 tablespoon garlic, crushed
2 tablespoon chopped onion
6 tablespoon bread crumbs
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon mixed spice

For covering:
White flour
Breads Crumbs
eggs

oil for fry

Preparations:

  1. Place all dough ingredients in food processor, blend for 1 minute.
  2. Divide mixture into equal portions and shape into patties 1 cm thick, cover with flour then egg and bread crumbs refrigerate for 10 minutes.
  3. Fry in hot deep oil over low heat until golden and crispy. 

Pakoras with Potato

I learn this from one of my friend in Kuwait, it is very famous to all Pakistani, Indian or Bangladesh. I used to prepare this during Ramadan only.

Ingredients:

1 large potato
1 cup besan flour
1/3 cup white flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon curry powder
1 cup water
oil for frying

Preparation:

  1. Cut the potato into thin slices.
  2. Sift all dry ingredients in large bowl.
  3. Add water and mix well until smooth and homogeneous.
  4. Add potato slices to the batter, cover and leave for 30 minutes.
  5. Heat 2 cm deep oil, add potato slices one by one, fry until golden. 

Carrots Chocolate Cake



Ingredients:

2 cups plain flour
1 cup carrots, grated
1 1/4 cups sugar
2 large eggs
1/2 cup oil
3/4 cup liquid or fresh milk
1 tablespoon baking powder
4 tablespoon cocoa powder
1/2 cup hazelnuts

Topping:
1/2 cup sweet condense milk
2 tablespoon sugar

Procedure:

  1. Grease a deep 20 cm round cake pan.
  2. Beat oil and sugar in small bowl with electric mixer for 3 minutes, add eggs and beat one at a time until combined.
  3. Combine all remaining dry ingredients in large bowl, add milk and mix all together.
  4. Transfer the mixture from small bowl to large bowl and stir all together with spatula.
  5. Add carrots, and mix well.
  6. Pour the mixture into prepared pan, spread the hazelnuts on the top.
  7. Bake in 350 degrees Fahrenheit for 45 to 50 minutes, or insert toothpick into the center of the cake till come out clean. take it out to cool.
Preparation for Topping:
  1. Put the pan over the heat add sugar, and stir until golden.
  2. Add condense milk and stir until thick.
  3. Cool, pour, and spread over the cake.

Macaroni With Mushroom And Cream

Ingredients:

2 cups Macaroni No. 24
4 cups cream
1 cup mushroom, slice
1 1/2 cups mozzarella cheese grated.
2 tablespoon oil
1 1/2 teaspoon garlic, crushed
1/2 cup chopped onion
1/2 cup chopped tomato
1/2 teaspoon mixed spice
1 teaspoon salt

Preparation:

  1. Boil the water on the pot, add 1 tablespoon oil, 1 teaspoon salt, and macaroni for about 8 minutes, drain.
  2. Fry onion and garlic in oil, add mushroom, season with salt and mixed spice. Mix well and cook on moderate heat for 5 minutes. 
  3. Add tomato and cream, reduce the heat and cook for 2 minutes only.
  4. Put half quantity of macaroni on oven pan base, add mushroom mixture and 1/2 cup of mozzarella cheese covered with the rest of macaroni and cheese.
  5. Bake in moderate heat or (350 degrees Fahrenheit) for about 30 minutes or until golden.


Macaroni With Bashamil

Ingredients:
2 cups macaroni no.24
2 cups minced meat
1 cup chopped onion
1 teaspoon garlic, crushed
2 tablespoon oil
2 tablespoon chopped parsley
1/4 cup mozzarella cheese, grated
salt, black pepper, mixed spice according to your taste

Bashamil:
4 tablespoon white flour
4 cups liquid or fresh milk
4 tablespoon butter or margarine
1/2 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon salt

Procedure:

  1. Boil the water on the pot, add 1 tablespoon oil, 1 teaspoon salt, and macaroni for 8 minutes, drain.
  2. To prepare Bashamil: melt the butter in a pan - add flour and stir over low heat for two minutes, add milk and stir until boiled and thickened. Season with salt, white pepper and garlic powder.
  3. Mix half quantity bashamil with macaroni.
  4. Put meat in pan and stir over low heat until all meat water out. Add 1 cup of water to it and cook until meat dried, add oil, onion, garlic, and parsley to the meat and stir until onion is tender, seasoning with salt, black pepper, and mixed spice.
  5. Grease oven proof dish with oil. Put half quantity of macaroni, spread meatand cover with the rest of macaroni and then pour the bashamil and mozzarella cheese at the top and bake in moderate heat oven until golden.

Chocolate Brownies

Chocolate Brownies With Sour Cream Frosting

Ingredients:

125g butter
185g dark chocolate, chopped
1 cup castor sugar
2 teaspoons vanilla essence
2 eggs, lightly beaten
1 cup plain flour
1/2 cup chopped pecans nuts

Sour Cream Frosting
100g dark chocolate, chopped
1/4 cup sour cream

Procedures:

  1. Grease a deep 19 cm square cake pan, line base with paper; grease paper.
  2. Melt butter and chocolate in saucepan over hot water.
  3. Transfer mixture to large bowl.
  4. Add sugar and vanilla essence stir all together.
  5. Then add eggs, sifted flour and pecans stir all together until mix.
  6. Pour mixture into prepared pan, bake in moderate oven for about 30 minutes, cool in pan.
  7. Turn brownies out, top with frosting; refrigerate until set before cutting. 
  8. Store in refrigerator.
Sour Cream Frosting:
Melt chocolate in heatproof bowl over hot water, stir in sour cream, stir constantly until mixture is smooth and glossy.

Keeping time: 4 days.

Barbecue Chicken

I use to prepare this recipe for our dinner is simple preparation and love by everyone in my family.

Ingredients:

3 lb (1.5 kg) chicken
1 cup (250 ml) spicy or bold barbecue sauce
3 cups (750 ml) prepared coleslaw
6 corn on the cob
1 cup (250 ml) fresh pineapple wedges
2 limes, cut into quarters
6 large pickles
1 large bag potato chips

Procedure:

1. Cut chicken into pieces and marinate in barbecue sauce for at least two hours or overnight.
2. Remove chicken from marinade and cook on pre-heated barbecue set at medium heat.
3. Turn chicken frequently and cook until meat thermometer register 165 fahrenheit when inserted into thickest part of chicken pieces.
4. Brush with additional sauce just before serving.
5. When chicken is almost cooked; cook corn on the barbecue for 10 minutes, turn frequently and spread with softened butter before serving.
6. Cook pineapple wedges on barbecue for the final few minutes.
7. Serve chicken with barbecue pineapple wedges, fresh lime wedges, coleslaw, corn, pickles and chips.
